Pasta with roasted veggies
This is an easy recipe that you can adjust based on the season. Ingredients below:
Favorite pasta (make enough for 4-6 people)
Seasonal vegetables such as: cauliflower, carrots, potatoes, sweet potatoes, squash
Fresh herbs (optional), salt, pepper
Chickpeas

Method - cut your vegetables and drizzle lightly with olive oil, salt and pepper. Roast in the oven for 25-30 minutes at 400 F (205 C), check that nothing is burning! While roasting, boil your pasta.

Once vegetables are roasted, combine pasta with roasted vegetables and optionally, add fresh herbs of choice on top. Some ideas are basil, cilantro, mint, and/or dill.

You can add chickpeas to this dish for a protein boost - roast with veggies or add at the end. Serve with a side of vegan yogurt.
